Salad Ingredients:

  • 12 oz cheese tortellini, cooked and cooled
  • 1 cup cherry tomatoes, halved
  • 1 cucumber, diced
  • 1/2 cup Kalamata olives, pitted and sliced
  • 1/4 red onion, thinly sliced
  • 1/2 cup feta cheese, crumbled
  • 1/2 cup artichoke hearts, quartered
  • 1/4 cup roasted red peppers, chopped

Optional Add-ins:

  • 1/4 cup sun-dried tomatoes, chopped
  • 1/2 cup chickpeas, drained and rinsed
  • Fresh basil or parsley for garnish

Greek Dressing Ingredients:

  • 1/4 cup olive oil
  • 2 tbsp lemon juice
  • 1 tbsp red wine vinegar
  • 1 clove garlic, minced
  • 1 tsp dried oregano
  • Salt and pepper to taste

Instructions

  • Cook the Tortellini:
    • Cook the tortellini according to package instructions. Drain and rinse under cold water to cool. Set aside.
  • Prepare the Vegetables:
    • While the tortellini cools, chop the cherry tomatoes, cucumber, Kalamata olives, red onion, artichoke hearts, and roasted red peppers into bite-sized pieces.
  • Make the Greek Dressing:
    • In a small bowl, whisk together olive oil, lemon juice, red wine vinegar, minced garlic, dried oregano, and a pinch of salt and pepper.
  • Assemble the Salad:
    • In a large mixing bowl, combine the cooled tortellini with the chopped vegetables. Pour the Greek dressing over the salad and toss gently to coat all the ingredients evenly.
  • Serve:
    • Serve the salad immediately, or cover and refrigerate for up to an hour to allow the flavors to meld. Garnish with fresh basil or parsley before serving if desired.

Notes

  • For a gluten-free version, substitute the tortellini with gluten-free pasta.
