  • 2 cups fresh strawberries, diced
  • 2 cups all-purpose flour
  • 1 cup granulated sugar
  • 1/2 cup unsalted butter or vegetable oil
  • 2 large eggs
  • 1 tsp vanilla extract
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1/2 tsp ground cinnamon (optional)
  • 1/4 tsp salt

Instructions

  1. Preheat your oven to 350°F (175°C). Grease a 9×5-inch loaf pan.
  2. In a large bowl, mix the flour, baking powder, baking soda, cinnamon, and salt.
  3. In another bowl, whisk together the sugar, eggs, butter (or oil), and vanilla extract until well combined.
  4. Gently fold the wet ingredients into the dry ingredients until just combined. Do not overmix.
  5. Carefully fold in the diced strawberries.
  6. Pour the batter into the prepared loaf pan and bake for 50-60 minutes, or until a toothpick inserted into the center comes out clean.
  7. Let the bread cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.

Notes

  • For a healthier option, substitute sugar with honey or stevia.
  • To prevent strawberries from sinking, toss them in a little flour before adding them to the batter.
  • Store the strawberry bread in an airtight container at room temperature for up to 3 days, or freeze for up to 3 months.
